Clam Chowder

Clam Chowder

Ingredients:

1/2 cup margarine

1/3 cup flour

2 tbs vegetable oil

1 large onion

3 stalks celery

2 cups clam broth

3 medium red potatoes

2 cans chopped clams

1 tsp thyme leaves

1/2 tsp thyme leaves

2 cups Half & Half

Directions:

Combine all ingredients except the Half & Half.  Once potatoes are done, add cream.  Do not boil!  Simmer over low heat so cream wil not curdle or stick to bottom of pan. Double boiler or crock pot is best to use if chowder needs to stay hot for an hour or more.

Serves 8 to 10.
