Wednesday, October 10, 2007, 6:30 pm

Apple Class, $50 per person  

Back by popular demand, our apple class will begin with a tasting of different apples from North Carolina and other regions.  Then Chef Beth will prepare a delicious five-course meal using apples in each course.  This is a great fall tradition.

International Soups and Stews,  $55 per person

Five fantastic fall and winter soups and stews will be prepared for this class:  Szechuan carrot soup, Louisiana gumbo,  Veal and asparagus blanquette, Tuscan Ribolitta, and Russian borscht. We will also be pairing each of these soups with an appropriate wine and sides.

Thanksgiving, $50 per person

Is it your turn to make Thanksgiving dinner this year?  Or are you looking for a fantastic side dish or appetizer to bring to Aunt Sally's?  Maybe you just want to give your usual menu a bit of flair?  If any of these situations apply, then this is the class for you!  We'll prepare everything but the turkey in the class — but we'll give you some tips for that, too!

'Tis the season for appetizers!  Five all-new appetizers and a finger dessert recipe will be demonstrated in this class — and then we'll eat them all!

Let's Go Nuts!  $50 per person

This is an all-new class featuring almonds, pecans, walnuts, peanuts, and cashews.  A five-course meal will be prepared using at least one of these nuts in each course, along with a recipe for our Five-Spice Nut Blend.

Aphrodisiac Class, $50 per person

This class has become so popular that we're bringing it back again just in time for Valentine's day.  Grab your sweetie and come on in for a romantic five-course dinner that may even get you some romantic dividends.

Mediterranean Tour, Part I:  Spanish Cuisine, $50 per person

For the first class of our four-part series, we will be concentrating on the foods of Spain.  Of particular interest will be the tapas-style foods or small plates.  Appropriate wines will be provided for all of the classes in this series.

Mediterranean Tour, Part II:  French and Italian Cuisine, $50 per person

Part two of our Mediterranean Tour takes us to Provence, Cote d'Azure, Piemonte, and Tuscany. Although these regions are in two different countries, the cuisines of these regions have a great deal of delicious points in common.

Greek cuisine is hearty, flavorful, and delicious.  We'll make some traditional dishes as well as some updated classics.

Mediterranean Tour, Part IV:  Moroccan Cuisine, $50 per person

Out of all of the classes we're teaching this year, I am looking forward to this one most of all.  Moroccan cuisine requires that you look at spices in a different way, and the results are fantastic.  Beautifully spiced, but not spicy. Five courses and French wines.  Can't wait!
